It’s been a while since I’ve posted a recipe – honestly, months of running and generally being outside enjoying the sunshine hasn’t given me the motivation to be creative in the kitchen.
That was until I discovered Good Carma’s Spread Sensation – a cashew-based cheddar alternative that had me feeling all the feels. I’ve been eating it on toast every day for the past week, but on Saturday I had a wave of inspiration and decided to sex it up a little bit. That’s where this little creation came from – it’s delicious! trust me, I wouldn’t be putting it out there if it wasn’t!
It’s quite simple, all you’ll need is:
- 2 slices of toast (my favourite is a nice seeded loaf)
- 4 fat, ripe figs
- A little coconut oil for frying
- Roughly 4 tbsp Balsamic Vinegar
- As much Spread Alternative as you feel necessary!
Chop up your figs into small chunks – 6ths or 8ths is about perfect.
Whilst your bread is in the toaster, fry the figs in a little coconut oil for 3-5 minutes on a medium/high heat. They’ll go soft and the sugars in the fruit will start to caramelise. Next, turn down the heat a little and add in your balsamic vinager. Throughout this entire process stir the figs constantly to avoid them sticking to the bottom of the pan. Keep stirring them over the heat until the balsamic vinegar takes on a syrup-like consistency – this should only take a couple of minutes.
Then, Spread a thick layer of Spread Alternative onto your toast.
Then top with your balsamic figs and enjoy!
I’ve actually used the Spread Alternative in a whole host of different ways – topped with avo and sundried tomatoes, to add a bit of excitement to beans on toast or just spread over crackers. It’s my new favourite go-to! It’s a tricky one to find but you can buy it online and a list of stockists is over on their website. Let me know if you’ve tried it and what you thought!
